Whole Chicken, Two Ways
Out of a whole (deconstructed) chicken, we decided to make both a stir fry and a soup!
We made soup and a stirfry out of the chicken shown in Figure 1.
1. Soup
Ingredients:
- Chicken carcass
- Ginger
- Garlic
- Mushrooms
- Shitake
- Enoki
- Oyster
- Bok choy
- Chicken stock cube
- Daikon
We boil the chicken in a pot of water with garlic, ginger slices, and a chicken stock cube.
Next we slice the daikon into a few slices and spiralize the rest.
Then we prepare all the vegetables for the soup and wait for the flavors in the broth to infuse.
Once the broth is ready we first add the mushrooms and daikon.
Five minutes before serving we add the bok choy.
2. Stir-fry
Ingredients:
- Chicken meat
- Breast
- Thigh
- Drumstick
- Ginger
- Garlic
- Spring onions
- Bell peppers
- Onions
- Sesame oil
- Soy sauce
We slice the chicken meat into bite size pieces. We then marinate it in a bath of sesame oil, soy sauce, spring onions, and minced ginger and garlic.
Then we prepared the accompannying vegetables: sliced peppers and onions.
After letting the chicken marinate for several hours, we carcaramelize the onions.
Next we add the chicken and peppers and cook until the chicken is moist and tender and let simmer.
